I've only just recently heard of baked oatmeal from #afarmhousefullblog. So after many weeks pondering I finally gathered my courage and stepped away from our family favorite of a bowl of stove top or microwaved oatmeal for breakfast. I decided to give it a try and was rewarded with an epic win! I modified a recipe I found on a Google search. I'm always trying to find new things. To mine and my families delight everyone asked for a second helping. We'll start planing on making baked oatmeal as a weekend breakfast, when the whole family is together. I doubled the recipe for my family of eight. I didn't have whipped cream or fruit this go around but can only imagine the light fluffy flavor it would add. Recipe before doubling with my modifications 350 for 30 minutes or to a light crisp 3 cups oats 1 cups brown monkfruit 3 eggs 1 tps salt 1 tps cinnamon 1 tps vanilla extract 1 cup coconut milk or 1cup water add 1/2 coconut sugar 1 tps baking powder 1/2 cup unsalted stick butter 1/2 cup of fruit (didn't have any at the time)
Cool whip or cream for topping
